I’ve been told by my doctors that the main way to see if you have Celiac is by a biopsy. You would need to be following your regular diet with gluten for 6 months, then have a biopsy done. I am one of those people you talk about that had the blood and skin tests that said I was negative for wheat gluten intolerance. I’ve had stomach issues for years. After almost 2 weeks gluten free; I also started ntoicing some changes. It’s been almost a year now and I know when I’ve made a mistake, believe me. It may not have been the chips or even necessarily what you ordered at the Mexican restaurant. Depending on how sensitive you are; if they don’t have a specific gluten-free menu, you may have to be really careful about cross-contamination with non gluten containing food. Good Luck.
